Ingredients

3 lbs ground meat
2 cans corn ( drained )
3 cans black beans ( drained )
3 cans diced tomatoes ( I use petite tomatoes )
3 packages taco seasoning
1 container sour cream
1 package soft taco-size flour tortillas
Soft Taco Mexican Lasagna is a fun spin on the classic Italian dish, featuring ingredients like ground meat, corn, black beans, and tomatoes. Instructions

1.In a pan, cook ground meat at medium heat until fully cooked and drain the excess fat.
2.Add corn, black beans, tomatoes, and taco seasoning to the pan and continue cooking until heated through.
3.Preheat oven to 350°F (175°C).
4.In a separate bowl, mix half of the container of sour cream with the cooked meat mixture.
5.Layer the bottom of a 9x13 inch baking pan with flour tortillas.
6.Spread half of the meat mixture over the tortillas and add another layer of tortillas.
7.Spread the remaining meat mixture over the second layer of tortillas and add another layer of tortillas on top.
8.Spread the rest of the sour cream over the tortillas on top and sprinkle with cheese.
9.Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is melted and bubbly.
