Ingredients

6 plum tomatoes ( these varieties work best for roasting ) or 6 roma tomatoes ( these varieties work best for roasting )
1 tablespoon olive oil
1 tablespoon butter
3 cups minced onions
1 1/2 teaspoons salt
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
8 cups well-cooked lentils ( I prefer red lentils )
black pepper , to taste
3 pitted sliced green olives

Instructions

1.Preheat your oven to 425 F ( 220 C )
2.Cut your tomatoes into equal halves and place them cut-side up on a baking sheet
3.Drizzle olive oil over the tomatoes and season with salt and pepper
4.Roast the tomatoes for 20-25 minutes
5.In another pan, melt the butter over medium-to-high heat
6.Add the onions and sauté until golden brown
7.Add salt, brown sugar and balsamic vinegar to the pan
8.Reduce the heat to low and continue cooking for 20-25 minutes or until the onions are caramelized
9.Combine the roasted tomatoes with the caramelized onions and sliced olives
10.Mix the tomato mixture with your well-cooked lentils and black pepper to taste
