Instructions

.Preheat the oven to 200°C (fan)/220°C/gas mark 7. Grease an 8cm deep, 20cm round cake tin with butter and line with parchment paper.
.Put the dark chocolate and butter in a heatproof bowl and place over a large pan of water on low heat, ensuring that the water is not touching the bottom of the bowl. Heat until the chocolate and butter have melted together, stirring occasionally. Once melted, remove from heat and allow to cool down to room temperature.
.In a separate bowl, whisk together the eggs, egg yolks, and caster sugar until the mixture is light and foamy. Sift in the self-raising flour and fold it gently into the mixture with a spatula until everything is well combined.
.Add half of the chocolate butter mixture to the bowl and fold it into the cake mixture. After that, pour the remaining chocolate butter mixture in the same batter and fold again until everything is well combined.
.Pour the batter into the prepared cake tin. Cut the chilled white chocolate into small pieces and sprinkle it over the batter, and then spoon the cherry conserve on top of that.
.Bake in the preheated oven for 15-20 minutes, or until the cake is set on top but still feels a little wobbly in the middle. Once out of the oven, let it cool for 5 minutes before removing it from the tin. Then leave it for another 5 minutes before removing the parchment paper from the cake. Serve the Soft-Centred, Black & White Chocolate Cake warm or at room temperature with ice cream or whipped cream.
