Ingredients

1/2 cup margarine or 1/2 cup butter , softened
2 cups sugar
1 cup oil
5 egg yolks , beaten
2 cups cake flour ( pref . soft as silk cake flour if you can get it )
1 teaspoon baking soda
1 cup buttermilk
1 teaspoon vanilla extract
5 egg whites , stiffly beaten
1 can coconut ( small , do not know how many ounces . This is all that the recipe gives )
1 cup chopped pecans
1/4 cup margarine or 1/4 cup butter , softened

1 lb confectioners ' sugar

Instructions

1.Preheat oven to 325°F. Grease and flour 3 ( 9-inch ) cake pans.
2.Cream margarine and sugar until light and fluffy.
3.Add oil and beaten egg yolks; mix well.
4.Sift flour and soda together 2 or 3 times.
5.Add sifted ingredients to creamed mixture alternately with buttermilk, beating very well after each addition
6.Add vanilla and stir in stiffly beaten egg whites.
7.Stir in coconut and chopped pecans.
8.Divide batter into 3 prepared pans and bake at 325°F for 25 minutes or until cakes test done.
9.Cream margarine and cream cheese.
10.Beat in confectioners sugar until mixture is smooth.
11.Stir in chopped pecans.
