75 g caster sugar
1 1/2 tablespoons cornflour
2 pears ( beurre bosc specified peeled cored )
2 teaspoons lime zest ( grated )
2 tablespoons lime juice
110 g caster sugar
2 tablespoons passion fruit pulp
1 egg ( lightly beaten )
1 teaspoon vanilla bean paste
250 ml water
300 g self-raising flour
sunflower oil ( to shallow fry )
125 g blueberries
2 tablespoons honey
1 tablespoon water

Made from a rich custard dough and shallow-fried until golden brown, these doughnuts are often filled with chocolate or fruit preserves and dusted with powdered sugar. Instructions

1.In a medium saucepan, whisk together milk, vanilla bean paste, egg yolks, sugar, and cornflour.
2.Cook on medium heat, whisking continuously until the mixture thickens and starts to boil.
3.Remove from heat and transfer to a large bowl to cool.
4.In a separate bowl, mix together the lime zest, lime juice, caster sugar, passion fruit pulp, egg, and vanilla bean paste.
5.Add this mixture to the cooled custard mixture and stir until well combined.
6.Add the water and self-raising flour to the mixture and stir until a smooth dough forms.
7.Cover and rest the dough for 20 minutes before rolling out to 1/2 inch thickness.
8.Cut the dough into circles using a round cutter or the mouth of a glass.
9.Heat the sunflower oil in a large skillet and fry the dough circles until golden brown on both sides.
10.Drain on paper towels and serve with blueberries, honey, and a drizzle of water for sweetness.
