Ingredients

1 liter water
650 g sugar
160 ml simple syrup
6 lime slices
8 sprigs of fresh mint , plus
4 sprigs of fresh mint , for decoration
80 ml fresh squeezed lime juice
sparkling water , as needed
Soda Chanh-Lime Lemonade or Lime Lemonade is a popular Vietnamese drink, typically sold at street food vendors and casual dining restaurants. But, this recipe is from Lêlê, a well-known Vietnamese chef who has opened up several Vietnamese restaurants outside of Vietnam. This drink is perfect to cool down with during the summer months, and is a staple in Vietnamese cuisine.

Instructions

1.In a large pot, combine water, sugar, and simple syrup over medium heat. Stir until sugar is dissolved.
2.Add lime slices and 8 sprigs of fresh mint to the pot and bring to a boil. Reduce heat and simmer for 5 minutes.
3.Remove from heat and let cool completely.
4.Once cooled, remove lime slices and mint sprigs from the pot.
5.Stir in fresh squeezed lime juice.
6.Fill a glass with ice, pour in the syrup until it fills about 1/3 of the glass.
7.Top off each glass with sparkling water to your desired level of carbonation and stir.
