1/4 cup sweet rice wine ( mirin )
1 tablespoon turbinado sugar or 1 tablespoon brown sugar

2 tablespoons rice vinegar
1 teaspoon sesame oil
1 lb asparagus
2 ounces fresh snow peas
1 red bell pepper
3 ounces shiitake mushrooms
1 cup bean sprouts , rinsed
8 ounces soba noodles
1/4 cup roasted peanuts , chopped

Instructions

1.In a small bowl, whisk together the ginger, sweet rice wine, sugar, and sea salt until well combined.

4.Cover and refrigerate the dressing until ready to use.

7.Remove the stems from the shiitake mushrooms and discard; slice the caps and add to the bowl with the soba noodles. Add the red bell pepper, bean sprouts, asparagus, and snow peas, and toss to combine.
8.Pour the dressing over the salad and toss to coat evenly. Top with chopped roasted peanuts and serve immediately.
