1/2 cup raisins , soaked in hot water and drained
1/2 cup gogi berries , soaked in hot water and drained

Instructions

1.Preheat the oven to 350°F (180°C) and line 2 baking sheets with parchment paper.
2.In a medium bowl, whisk together the almond milk and the ground flax seeds, stir and set aside.
3.In a large bowl, whisk together the canola oil, sesame oil, maple syrup, demerara sugar, granulated sugar, ginger, and vanilla. Add the flax mixture and whisk until thoroughly combined.
4.In a medium bowl, combine the barley flour, whole wheat flour, wheat germ, baking powder, cinnamon, nutmeg, cardamom, and salt and stir to mix them all together.
5.Add the dry ingredients to the wet ingredients and mix until well combined. Add the carrots, oats, coconut, walnuts, kasha, candied ginger, soaked raisins, and drained gogi berries. Mix to combine all of the ingredients.
6.Scoop heaping tablespoons of the dough, rolling each portion between your palms to form a ball. Space the cookies about 2 inches (5 cm) apart on the prepared baking sheets.
7.Bake for 15 to 20 minutes or until the cookies are lightly browned and firm to the touch.
