Ingredients

1 cup self-raising flour
1 cup plain flour
1 teaspoon bicarbonate of soda
1 teaspoon mixed spice
1 cup walnuts
1 lemon , juice and zest of
3 cups dried fruit ( sultanas , chopped dried apricots , cranberries , dates , currants etc . )
2 cups raw carrots , grated
1 cup white sugar
4 eggs
1 cup vegetable oil
1 tablespoon marmalade

Instructions

1.Preheat oven to 160°C and line a 23cm round cake tin with baking paper.
2.Sift the self-raising flour, plain flour, bicarbonate of soda and mixed spice together into a large mixing bowl.
3.Add the walnuts, lemon zest, dried fruit, and grated carrots. Mix well.
4.In another bowl, beat the sugar and eggs together, then add the vegetable oil, lemon juice and marmalade.
5.Pour the egg mixture into the flour mixture and stir until all ingredients are well combined.
6.Pour the batter into the prepared tin, smooth with a spoon.
7.Bake in the preheated oven for 1 hour and 45 minutes or until a skewer comes out clean.
8.Cool in the tin for 5 minutes before turning onto a wire rack to cool completely.
