Instructions

1.In a food processor, mix together 1 1/3 cups of shredded coconut and 1/2 cup of confectioners’ sugar until finely ground.
2.Add in 3 1/2 ounces of ricotta cheese and process until the mixture comes together.
3.Form the mixture into 16 small balls and press an almond into the center of each ball.
4.Place the balls in the fridge to chill for at least 30 minutes.
5.In a double boiler, melt 2 1/2 squares of white chocolate with 2 2/3 tablespoons of heavy cream until smooth.
6.Once the chocolate has melted, dip each ball into the chocolate mixture and roll in 1/4 cup of shredded coconut to coat.
7.Place the balls back in the fridge to chill for at least 30 minutes before serving.
