6 about 800g chicken thigh fillets , thinly sliced
1 red onion , cut into thick wedges
3 cm fresh ginger , peeled , thinly sliced
2 garlic cloves , crushed

150 g snow peas , trimmed
1 punnet baby corn , halved diagonally

Instructions

1.In a medium-sized mixing bowl, combine chicken with 1 tsp sesame oil, Chinese five spice powder, and a pinch of salt.

3.In the same wok/skillet, add onions and ginger. Sauté for 2-3 minutes until fragrant.
4.Add garlic, snow peas, and baby corn and continue to cook for another 2-3 minutes.
5.Return chicken to the pan and add oyster sauce and ketjap manis. Stir everything together until chicken is fully coated and sauce has thickened, about 1-2 minutes.
6.To serve, garnish with blanched almonds and fresh coriander leaves. Serve with steamed rice.
