Instructions

1.Preheat the oven to 180°C and grease a lamington tray with butter.
2.Beat butter and caster sugar together until light and fluffy. Add the egg and mix well.
3.Sift the self-rising flour over the mixture and add the milk and vanilla essence. Mix well to combine.
4.Spoon the mixture into the greased tray and bake for 15-20 minutes, or until golden brown.
5.Allow the cake to cool, then cut into small squares.
6.In a mixing bowl, combine the icing sugar and cocoa. Add boiling water to the mixture and mix well to a smooth consistency.
7.Dunk each square of cake into the cocoa icing mixture, then roll it in the desiccated coconut. Place the Snow Ball onto a wire rack to set.
8.Once set, serve and enjoy!
