Ingredients

1 tablespoon extra virgin olive oil
1/2 cup onion , chopped
1/2 cup red bell pepper , chopped
2 garlic cloves , minced
2 cans tomatoes , drained
1 can tomato paste
1 cup basil leaves , shredded
2 cups kale , shredded
1 large carrot
2 tablespoons parsley , minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 pinch red pepper flakes
1/2 teaspoon sugar
1/2 teaspoon black pepper
3/4 teaspoon salt

Instructions

1.Heat oil in pan over medium heat.
2.Add onions, red bell pepper and garlic. Cook for 5 minutes, stirring occasionally.
3.Add canned tomatoes, tomato paste and kale. Mix well.
4.Peel and shred the carrot and add it with basil, parsley, oregano, thyme, red pepper flakes, salt, black pepper and sugar into the pan. Stir everything well.
5.Bring to boil and reduce heat. Let it simmer for 30 minutes or until everything is well combined. Stir occasionally. Once done let it cool down.
6.Blend everything in a blender or use an immersion blender to make it smooth.
7.Serve with your favourite pasta, meat or vegetables. Store any leftover sauce in an airtight container in the fridge or freezer.
