Ingredients

6 fish fillets ( red snapper , sea bass , grouper , tilapia or mahi mahi - 6 oz . each )
2 garlic cloves , finely chopped
1 lime , juiced
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 cup Mexican crema ( creme fraiche or heavy cream )
1 cup milk
2 poblano chiles
2 tablespoons unsalted butter
1 tablespoon all-purpose flour
1/2 teaspoon nutmeg , grated
1 cup monterey jack cheese , shreded ( or cheese or your choice )

Instructions

1.Preheat the oven to 375°F.
2.Season both sides of the fish fillets with garlic, lime juice, salt, and pepper.

4.Heat a skillet over medium-high heat and melt the butter. Add the flour, stirring constantly until the mixture turns a light brown color.
5.Pour in the poblano chile mixture and cook, stirring constantly, until the sauce starts to thicken.
6.Grease a baking dish and pour a layer of the poblano chile sauce onto the bottom. Place the seasoned fish fillets on top of the sauce and pour the remaining sauce over the fillets. Sprinkle the shredded cheese on top.
7.Bake for 25 to 30 minutes or until the fish is cooked through and the cheese is melted and bubbly. Serve hot.
