6 -7 lbs boneless pork roast ( shoulder or butt )
kosher salt
ground black pepper
2 large onions , thinly sliced
8 garlic cloves , thinly sliced
3 tablespoons fresh thyme leaves

8 tablespoons butter
1/2 cup all-purpose flour
4 cups chicken broth
1/2 lemon , juice of ( optional )

Instructions

1.Preheat the oven to 325ºF.
2.Season the pork roast generously with kosher salt and black pepper.
3.In a large Dutch oven over medium heat, add vegetable oil. Once hot, brown the pork roast on all sides for about 10-12 minutes.
4.Remove the pork roast from the Dutch oven and set aside.
5.In the same Dutch oven, melt the butter and add onions, garlic, fresh thyme, and dried rosemary. Cook for 10 minutes or until the onions become translucent.
6.Sprinkle the flour over the vegetables and stir to combine.
7.Slowly whisk in the chicken broth until smooth.
8.Add the pork roast back into the Dutch oven, cover with a lid, and transfer to the preheated oven. Roast for 3 to 4 hours or until the meat is fork-tender.
9.Once the pork is ready, remove it from the Dutch oven. Let it rest for a few minutes before slicing.
10.Meanwhile, pour the liquid remaining in the Dutch oven through a fine-mesh strainer into a medium saucepan. Place the saucepan over medium-high heat and let it reduce until thickened.
11.Squeeze fresh lemon juice over the pork roast, pour some of the sauce over the meat, and the rest in a gravy boat. Serve with your favorite rice!
