Ingredients

3 lbs tomatillos , cut into quarters
2 habanero peppers , seeds and all
2 onions , diced
3 garlic cloves
2 -4 chipotle chiles in adobo
1 1 cup fresh parsley ( I used all three ) or 1 cup fresh basil ( I used all three )
1/4 cup bottled lemon juice
1 -2 teaspoon cumin ( optional )
1/4 cup vinegar
2 teaspoons salt
1 teaspoon black pepper
1 lime , very fine shredded zest and juice
This smoky, spicy tomatillo salsa verde, also known as "canned green hell," is a popular condiment in Mexican cuisine. Instructions

1.Preheat your oven to 425°F.
2.Place the tomatillos, habanero peppers, onions, and garlic in a large bowl and mix well.
3.Transfer the mixture to a baking dish and bake for 20-25 minutes, until the tomatillos are soft and slightly charred.
4.Let the mixture cool, then transfer to a blender or food processor.
5.Add the chipotle chiles in adobo, fresh herbs, lemon juice, cumin (if using), vinegar, salt, black pepper, and lime zest and juice.
6.Pulse until the mixture is smooth and homogenous, scraping down the sides as necessary.
7.Adjust seasoning to taste.
8.Serve chilled with tortilla chips or use as a condiment for meats, tacos, or burritos.
