8 ripe plum tomatoes
1 tablespoon vegetable oil

Smoky four-pepper salsa is a Tex-Mex style salsa that is a popular party appetizer in the United States. Instructions

1.Preheat an outdoor grill for high heat.
2.Place the tomatoes onto the preheated grill and cook until charred and tender, about 5 minutes per side.
3.Heat oil in a skillet over medium heat. Cook and stir poblano peppers, Anaheim chile peppers, jalapeno pepper, and green bell pepper in hot oil until slightly softened, 5 to 10 minutes. Cool peppers slightly.
4.Coarsely chop roasted tomatoes, cooked peppers, cilantro, onion, and garlic in a food processor fitted with a chopping blade.
5.Transfer chopped tomato mixture to a large bowl. Stir in vinegar, salt, and liquid smoke concentrate until thoroughly combined. Refrigerate for at least 2 hours before serving.
