Polenta is a traditional Italian dish made from boiled cornmeal. In this recipe, we're adding a few twists to make it more modern and flavorful. First, we're sautéing onions and sun-dried tomatoes to add some sweetness and umami to the dish. Then, we're adding chipotle chili sauce to give it a smoky kick. Finally, we're stirring in chunks of creamy brie cheese to give it a rich, velvety texture. The result is a delicious, comforting side dish that's perfect for chilly nights or cozy dinners at home.

Instructions

.In a large pot, melt butter over medium heat.
.Add diced onion to the pot and stir until onion is soft and translucent.
.Add salt, red pepper flakes, and diced sun-dried tomatoes to the pot and stir for 1-2 minutes.
.Add minced garlic clove to the pot and stir for 1 minute.
.Add chicken broth (or water) and chipotle chili sauce to the pot and bring to a boil.
.Reduce heat to low, add cornmeal to the pot in a steady stream while whisking constantly to prevent clumps.
.Continue whisking until the polenta thickens and pulls away from the sides of the pot (about 20-30 minutes).
.Once the polenta is cooked, turn off the heat and stir in chunks of brie cheese until melted and creamy.
