Ingredients

1 lb dried canary beans
1 large white onion , quartered
2 tablespoons vegetable oil
2 sprigs fresh epazote ( or 1 teaspoon dried epazote , crumbled If desired )
1 teaspoon salt and pepper
6 slices bacon
2 cups salsa ( I like spicy )
1/2 cup beer
1 cup water
4 ounces pepper jelly ( Spicy Habanero Jelly Spicy Habanero Jelly or your favorite )
1 teaspoon paprika
1 teaspoon cumin
1 tablespoon fresh cilantro or 1 tablespoon parsley
2 smoked turkey wings
Originally from the Canary Islands, Smoky baked beans are now a staple in Southern U.S. cuisine. The recipe has many variations and is resonant of flavors from Latin American, Spanish and indigenous American cuisines. This recipe calls for dried canary beans which are cooked low and slow with bacon, turkey wings, spices and a bit of beer. The final result is a delicious, smoky, and spicy flavor. These baked beans are easy to prepare and are a perfect complement for barbecues, picnics, and family gatherings.

Instructions

1.Rinse beans and soak them overnight in enough cold water to cover them completely.
2.Preheat oven to 325°F. Drain the beans.
3.Cook bacon in a skillet until crisp. Remove and crumble the bacon.
4.In the same pan, sauté the onions until soft and translucent. Add garlic and cook for an additional minute.
5.Add the beer, water, salsa, jelly, spices, and crumbled bacon to the onions. Stir until everything is thoroughly blended.
6.Layer turkey wings on the bottom of a 9x13 baking dish. Spread onion and bacon mixture on top of the turkey.
7.Add the beans, and tuck epazote sprigs into the beans.
8.Pour enough water over the beans to cover them by about an inch.
9.Cover the dish tightly with aluminum foil.
10.Bake for about 3 1/2 hours or until beans are tender. Check on beans every hour, adding more water if necessary.
