Ingredients

1 red capsicum , seeded and finely chopped
1 onion , finely chopped
4 slices bacon , finely chopped
250 g sour cream ( I use low fat sour cream )
This Smokey Red Capsicum (Pepper) Dip is perfect for anyone who enjoys bold, smoky flavors. The creamy sour cream base is perfectly complemented by the rich depth of flavor from the crispy bacon and sweet, caramelized onions. The slow-cooked capsicum confers a smoky taste to the dip that is the perfect pop of flavour. The dip is perfect for a snack or as a party appetizer but should be consumed in moderation since it is high in fat.

Instructions

1.Heat a frying pan over medium-high heat. Cook bacon for 5 minutes or until crispy.
2.Remove bacon and place it on a paper towel-lined plate.
3.Add onion to the pan and stir for 5 minutes or until softened.
4.Add red capsicum (pepper) to the pan and cook until softened, stirring occasionally.
5.Remove the mixture from heat and let cool.
6.In a separate bowl, mix the sour cream and cooled capsicum/onion mixture until well combined.
7.Add bacon and mix again.
8.Transfer the dip to a bowl and garnish with additional bacon and chopped chives (optional).
