Ingredients

1 kg smoked turkey breast
4 shallots , chopped
3 tablespoons brandy
2 cups cream
2 eggs
1 teaspoon cayenne pepper
6 sheets phyllo pastry
60 g butter or 60 g margarine , melted ( 2 oz . )

Instructions

1.Cut the smoked turkey breast into 2-cm cubes.
2.In a pan, sauté the chopped shallots with brandy until the brandy evaporates and the shallots are soft and translucent.
3.In a bowl, whisk together the cream, eggs, and cayenne pepper.
4.Add the sautéed shallots to the egg mixture and stir well.
5.Grease a 25cm x 15cm loaf tin with melted butter or margarine.
6.Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4.
7.Lay the phyllo sheets out one by one on a clean, dry surface, brushing each one with melted butter or margarine.
8.Arrange the turkey cubes inside the loaf tin and pour the egg and cream mixture over them.
9.Cover the turkey and egg mixture with the phyllo sheets, tucking the excess pastry over the edges.
10.Brush the top with the remaining melted butter or margarine and bake for 50 minutes, or until golden brown. Let cool before slicing and serving.
