Instructions

1.Flake the smoked trout fillets and set aside.
2.In a medium bowl, whisk together the milk, egg yolks, and heavy cream until well combined. Season with pepper.
3.In a large non-stick skillet over medium-high heat, melt 1 tablespoon of the butter. In another bowl, beat the egg whites until stiff peaks form.
4.Gently fold the egg whites into the yolk mixture.
5.Pour the egg mixture into the skillet and cook until the bottom is set but the top is still runny.
6.Sprinkle the flaked smoked trout and grated cheddar cheese over the omelette.
7.Using a spatula, fold the omelette in half and continue cooking until the cheese is melted and the omelette is completely cooked through.
8.Serve immediately and season with salt, if needed.
