Ingredients

4 ounces smoked tofu , cut into approximately 1-inch pieces and thinly sliced ( savory baked tofu works well , too , if you ca n't find smoked )
1 tablespoon chili powder
2 cups cabbage , shredded ( the recipe calls for it raw , but I like to use a little extra and saute it for a couple of minutes f )
1 -2 chipotle chile in adobo
1 cup tomato sauce
3 scallions , chopped
salt
pepper
4 flour tortillas
6 ounces sharp cheddar cheese , shredded
2 tablespoons vegetable oil or 2 tablespoons olive oil
1 cup sour cream ( optional )
2 tablespoons chopped cilantro ( optional )
1 tomatoes , chopped ( optional )
Smoked Tofu Baked Chimichangas is a classic Mexican dish that originated in Sonora, Mexico. It is basically a deep-fried burrito stuffed with meat, vegetables, and cheese. In this vegan version, we will be using smoked tofu instead of meat. Chimichangas are often served with a side of salsa, sour cream, and guacamole. Instructions

1.Preheat the oven to 400°F.
2.In a frying pan, heat the oil over medium-high heat. Add sliced smoked tofu and sauté until golden brown for 2-3 minutes.
3.Add shredded cabbage and cook for 1-2 minutes, stirring occasionally.
4.Add chili powder, chipotle chiles, and tomato sauce. Cook for another 2-3 minutes until the sauce thickens.
5.Take flour tortillas and divide the filling evenly between the tortillas. Sprinkle shredded cheddar cheese on top.
6.Fold the tortillas neatly around the filling and place them on a baking sheet lined with parchment paper, seam-side down.
7.Brush the chimichangas with oil and bake them for 12-15 minutes, until the tortillas are golden brown and crisp.
8.Garnish with chopped scallions, cilantro, chopped tomatoes, and sour cream, as desired.
