Instructions

1.Preheat your smoker to 250°F.
2.In a bowl, mix the garlic, chili peppers, cumin, tomato paste, cilantro, and olives until well combined.
3.Rub the inside of the snapper with olive oil and pepper, then stuff the onion and tomato inside the fish.
4.Spread the spice mixture all over the outside of the fish.
