16 slices smoked salmon ( about 300g )
1 large avocado , sliced
4 spring onions , sliced
16 round rice paper sheets
1/2 cup sweet chili sauce
1/4 cup lime juice
2 tablespoons chopped fresh coriander
2 tablespoons chopped fresh mint leaves

Instructions

1.Start by preparing all the ingredients.
2.Fill a large bowl with lukewarm water.
3.Dip a rice paper sheet into the water for a few seconds until it softens.
4.Carefully place the rice paper onto a damp tea towel.
5.Layer the smoked salmon, sliced cucumber, shredded carrot, and avocado on top of each other.
6.Roll the rice paper tightly around the filling, tucking in the sides.
7.Continue with the remaining rice paper sheets and filling.
8.Mix the sweet chili sauce, lime juice, chopped coriander, and mint leaves together in a small bowl to make dipping sauce.
9.Serve the rolls with the dipping sauce on the side.
