Ingredients

1/2 cup soy sauce
1/4 cup chinese rice wine or 1/4 cup dry sherry
1 tablespoon minced fresh gingerroot
2 teaspoons granulated sugar
1 lb fresh sockeye salmon fillet
1/2 cup brown sugar , packed
1/3 cup uncooked long grain rice
1/4 cup chinese black tea , Oolong Tea
2 whole star anise
1 teaspoon cornstarch
4 teaspoons cold water

Instructions

1.In a small bowl, mix together the soy sauce, Chinese rice wine or dry sherry, minced ginger, and granulated sugar until well combined.
2.Place the fresh sockeye salmon fillet in a shallow dish and pour the marinade over the salmon, flipping to make sure it's coated evenly. Leave the salmon to marinate in the refrigerator for at least 1 hour.
3.In another bowl, combine the brown sugar, uncooked long-grain rice, Chinese black tea, and star anise.
4.Preheat a wok or skillet over high heat. Remove the salmon from the marinade and pat dry with a paper towel. Discard the marinade.
5.Place the rice mixture in the bottom of the wok or skillet. Place the salmon fillet on top of the rice mixture.
6.Cover the wok or skillet with a lid and reduce the heat to low. Smoke the salmon for 10 to 12 minutes, until the salmon is cooked through and flakes easily with a fork.
7.In a small bowl, whisk together the cornstarch and cold water. Pour the mixture into the smoked salmon sauce and stir gently to combine.
8.Serve the smoked salmon hot with the sauce on the side.
