Ingredients

700 g large jersey royal potatoes or 700 g other new potatoes
1 bunch spring onion , trimmed and sliced
300 g full-fat creme fraiche or 300 g heavy cream
salt and pepper
1 tablespoon butter
200 g smoked salmon
1 tablespoon dill
2 egg yolks
100 ml milk

Instructions

1.Preheat the oven to 180C/350F.
2.Peel and slice the potatoes into rounds of 1/4 inch.
3.In a bowl, mix in the sliced spring onions and creme fraiche with the potato slices and season with salt and pepper.
4.Grease the baking dish and layer the potato mixture in the bottom.
5.Arrange slices of smoked salmon on top and sprinkle with dill.
6.Cover the top with the remaining potato mixture.
7.Beat together the egg yolks and milk, and pour over the top of the pie.
8.Bake for 1 hour until the potato is cooked and golden.
