Ingredients

1/4 cup creme fraiche
3/4 lb cream cheese , at room temperature
4 scallions , green parts only , chopped
1/4 cup finely chopped watercress leaf
kosher salt and fresh ground white pepper , to taste
24 thin slices white bread
Smoked salmon and scallion tea sandwiches are a sophisticated take on the traditional finger sandwich. Smoked salmon, a classic ingredient in a tea sandwich, adds a smoky flavor to the creamy filling of creme fraiche and cream cheese. Instructions

1.Preheat the oven to 350°F.
2.In a medium skillet over medium heat, add the sesame seeds and toast them until golden brown for about 3 minutes. Then, remove them from heat and transfer to a small bowl to let them cool down.
3.In another bowl, mix the creme fraiche, wasabi powder mixture, ginger, cream cheese, and scallions until well combined.
4.Add the watercress to the cream cheese mixture and season it with salt and pepper to taste.
5.Cut the crusts off the bread slices and flatten them with a rolling pin.
6.Spread the cream cheese mixture on one side of each slice, then place a piece of smoked salmon on top.
7.Roll the sandwiches and secure each one with a toothpick.
8.Brush the rolled sandwiches with a little water and coat them with the toasted sesame seeds.
9.Place the sandwiches onto a baking sheet and bake for 8-10 minutes until the bread is slightly golden brown.
10.Cut each sandwich into 3 even pieces and serve at room temperature or chilled.
