1 cup buckwheat flour

2 tablespoons unsalted butter , melted
2/3 cup creme fraiche
3 tablespoons fresh dill , chopped
8 ounces smoked salmon , thinly sliced

Instructions

1.In a large mixing bowl, whisk together buckwheat flour, all-purpose flour, salt, and fast rise yeast.
2.In a separate bowl, beat eggs and add in warm milk and melted butter. Pour into the dry ingredients bowl and mix well.
3.Cover the bowl with a clean towel and let the batter rise for 30 minutes.
4.Stir in creme fraiche and dill.
5.Heat a nonstick skillet over medium heat. Drop spoonfuls of batter onto the skillet, approximately 2 tablespoons per blini.
6.Cook until the blinis are bubbly on top and the edges start to dry out. Flip and cook until golden brown on both sides.
7.Serve with thinly sliced smoked salmon on top.
