Ingredients

2 lbs boneless smoked pork shoulder ( also called `` sweet morsel '' )
2 cans sauerkraut , rinsed and drained
2 medium onions , sliced
1 can tomatoes , cut up
1 bay leaf
1 tablespoon paprika
1 1/2 teaspoons caraway seeds
1/4 teaspoon pepper
1/4 cup cold water
2 tablespoons cornstarch
1/2 cup sour cream ( optional )

Instructions

1.In a large crockpot, add in the sliced onions at the bottom in an even layer.
2.Add the rinsed and drained sauerkraut and the can of cut up tomatoes on top of the onions.
3.Place the smoked pork shoulder (sweet morsel) on top of everything.
4.Sprinkle the bay leaf, paprika, caraway seeds, and pepper on top of the pork.
5.Cook on low heat for 6-7 hours or on high heat for 4-5 hours until the pork is tender and easily falls apart.
6.Remove the pork and place it on a dish. Discard the bay leaf.
7.In a small bowl, mix the cold water and cornstarch until smooth.
8.Add the cornstarch mixture to the sauerkraut mixture in the crockpot and stir until well combined.
9.Cover and cook on high heat for 15-30 minutes or until the sauce is thickened.
10.Serve the sauerkraut mixture over the pork and add some sour cream on top (optional). Enjoy!
