Ingredients

2 1/4 cups long-grain white rice
3 3/4 cups reduced-sodium chicken broth , defatted
1/3 cup whiskey
2 teaspoons dried basil
2 teaspoons dried chervil or 2 teaspoons thyme
1 tablespoon canola oil
3 leeks , white & light green parts , washed and chopped
1 large onion , chopped
1 stalk celery , chopped
3 cloves garlic , minced
2 cups fresh spinach leaves , washed and torn into small pieces
7 1/2 ounces smoked oysters , drained and sliced
salt
freshly ground black pepper
Smoked Oyster & Rice Stuffing is a unique stuffing dish perfect for Thanksgiving or any family gathering. The combination of rice, fresh vegetables, and smoked oysters result in a delicious and entirely gluten-free stuffing that is easy to make. Instructions

1.Rinse the rice well and drain it.
2.In a medium-sized pot, combine the rice, chicken broth, whiskey, dried basil, and dried chervil or thyme. Bring to a boil then reduce heat to the lowest setting and cover tightly with a lid. Cook for 20 minutes.
3.In a skillet, heat canola oil over medium heat. Add the leeks, onion, celery, and garlic. Cook while stirring occasionally until the vegetables are soft and translucent.
4.Add spinach to the skillet and cook until spinach is wilted.
5.Add the cooked rice to the skillet with the vegetables and cook for 2–3 minutes.
6.Remove the skillet from heat and stir in the sliced smoked oysters, salt, and black pepper, according to taste.
