Ingredients

2/3 cup hot water
1 chicken stock cube
2 teaspoons gelatin
2 cans smoked oysters
3 shallots
1/2 cup sour cream
1/3 cup mayonnaise
salt and pepper
3 tablespoons mayonnaise ( extra )

Instructions

1.Combine hot water and chicken stock cube in a small bowl, stir until the stock has dissolved.
2.In a medium bowl, sprinkle the gelatin over the stock and let it sit for 5 minutes.
3.Add the drained smoked oysters to the gelatin mixture, stir to combine.
4.In a food processor, pulse 3 shallots until finely chopped.
5.Add the sour cream, 1/3 cup mayonnaise, salt and pepper to the food processor and pulse until combined.
6.Add the oyster mixture to the food processor, pulse until smooth.
7.Preheat the oven to 350F.
8.Grease a 2-cup ramekin with nonstick cooking spray.
9.Spread 3 tablespoons mayonnaise over the bottom of the ramekin.
10.Finely chop 3 shallots and sprinkle them over the mayonnaise.
11.Spread the oyster mixture on top.
12.Sprinkle the chopped parsley over the top.
13.Bake for 15 minutes until lightly browned on top.
14.Chill the pate in the refrigerator for 1-2 hours before serving.
