Ingredients

500 g smoked haddock
300 ml milk
25 g butter
2 large leeks , sliced
25 g plain flour
2 teaspoons coarse grain mustard
250 g mascarpone
3 hard-boiled eggs , quartered
1 large floury potato , about 250g
75 g grated mature cheddar cheese
salt & freshly ground black pepper

Instructions

1.Preheat oven to 200C/Fan 190C/Gas 6.

5.Add the flour and cook for 1-2 minutes, stirring well.
6.Gradually add the reserved milk from the haddock, whisking well after each addition.
7.Add the coarse grain mustard and mascarpone, stirring until the cheese has melted.
8.Add the haddock and hard-boiled eggs, then season to taste.
9.Grate the potato and mix with the grated cheese and some seasoning.
10.Spoon the haddock mixture into an ovenproof dish and top with the potato mixture.
11.Bake for 20-25 minutes until golden brown and piping hot.
