4 red peppers , roasted and skinned ( seeds removed )
1 chipotle chile
1 red bird 's eye chili
1 dash olive oil
2 garlic cloves , chopped

Instructions

1.Preheat a grill or barbecue to high heat.
2.Place the red peppers, chipotle chili, and red bird's eye chili on a grill or barbecue and cook until blackened all over.

4.After 10 minutes, use your hands to remove the skins, stems and seeds from the peppers and chilies.

6.In a pan, heat olive oil over medium-high heat.
7.Add garlic and paprika and cook until garlic is golden brown.
8.Add the ground pepper and chili mix to the pan and cook for 2 more minutes.
9.Add sugar and fish sauce (to taste) and stir.
10.Remove from heat, stir in lemon juice to taste, and let cool.
11.Serve it drizzled over grilled meat or salad.
