2 onions , peeled and finely chopped
4 garlic cloves , crushed
2 stalks celery , finely chopped

1 1/2 teaspoons turmeric

18 ounces smoked tofu , drained and mashed
200 g cashew nuts , finely ground
2 tablespoons water
to taste salt and pepper

600 ml vegetarian red wine or 600 ml vegan red wine
2 -3 cloves
orange rind
2 -3 cinnamon sticks

Instructions

1.Heat 2 tablespoons of vegetable oil in a large frying pan over medium heat. Add onions, garlic, celery, dried basil, dried thyme, turmeric, and tamari. Cook for 5-7 minutes or until the onions are translucent.
2.In a large bowl, mix mashed smoked tofu and finely ground cashews. Add the onion mixture, 2 tablespoons of water, salt, and pepper. Form the mixture into medallions.
3.In the same frying pan, heat 2 tablespoons of vegetable oil over medium heat. Add shallots and shiitake mushrooms. Cook for 5-7 minutes or until the mushrooms are tender.
4.Add dried cumin, yeast extract, and freshly chopped walnuts. Cook for another minute or until fragrant. Add fresh whole wheat breadcrumbs, salt, and black pepper.
5.In a saucepan, add demerara sugar, vegetarian or vegan red wine, cloves, orange rind, and cinnamon sticks. Boil for 10-12 minutes or until the mixture is reduced to a thick sauce.
6.Preheat the oven to 375°F. Bake for 15-20 minutes or until the medallions are golden brown. Serve with the stuffing and wine reduction.
