Ingredients

1 lb fresh wild boneless salmon fillet ( may use Atlantic or Pacific )
3 1/2 ounces smoked salmon
2 shallots
1 tablespoon capers
1/2 bunch fresh chives
1 cup yogurt
1/2 lime , juice of
1/2 cup unsalted clarified butter ( one stick of butter )
2 drops Tabasco sauce

Instructions

1.Heat olive oil in a skillet over medium-high heat
2.Season fresh salmon with salt and pepper, and cook in the skillet until browned and cooked through. Remove from heat and let cool.
3.Finely chop smoked salmon and shallots, and mix together with capers and chives in a bowl
4.Flake the cooked salmon into the bowl with the smoked salmon mixture. Add yogurt, lime juice, and Tabasco sauce and stir until well combined.
5.Melt the clarified butter in a saucepan over low heat, skimming off any foam. Pour the melted butter over the salmon mixture and stir until well coated. Chill the rillettes for at least 2 hours before serving.
6.Serve with crackers, toast points, or cucumber rounds for a delicious and healthy treat.
