Ingredients

2 tablespoons olive oil
2 lbs beef stew meat , cut into 1 1/2 ( with some fat left on the meat )
1 large yellow onion , peeled and coarsely chopped
1/2 carrot , sliced
1 lb yukon gold potato , scrubbed and quartered
4 stalks celery , washed and sliced thick
2 garlic cloves , peeled and chopped
3 bay leaves
1 tablespoon parsley , chopped
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 -3 tablespoons all-purpose flour
4 cups beef stock
1 can V8 vegetable juice
3 beef bouillon cubes
1 bottle beer ( Irish ale )
1 cup fine red wine
1 can diced tomatoes with basil and garlic ( undrained )
salt and black pepper , freshly ground

Instructions

1.In a large Dutch oven, heat olive oil over medium-high heat.
2.Add the beef stew meat with some fat left on the meat, and cook until browned on all sides.
3.Add coarsely chopped yellow onion and sliced carrot to the pot and sauté for 5 minutes until they are soft.
4.Add quartered Yukon gold potatoes, sliced thick celery, and chopped garlic; cook for 2 minutes.
5.Add bay leaves, chopped parsley, dried thyme, dried rosemary, and 2-3 tablespoons of all-purpose flour. Stir to combine and cook for 1-2 minutes.
6.Pour beef stock, V8 vegetable juice, beef bouillon cubes, Irish ale, red wine, and diced tomatoes with basil and garlic into the pot. Stir to combine.
7.Season to taste with salt and freshly ground black pepper.
8.Bring to a boil, then reduce heat to low, cover and let simmer for 2-3 hours or until meat is tender.
9.Remove bay leaves and serve hot in bowls with some crusty bread on the side.
