4 green plantains , peeled and cut into 1/2-inch chunks
4 cups beef stock or 4 cups chicken stock
oil ( for deep frying )
1/2 4 slices thick bacon or 4 salt pork
1 tablespoon chopped garlic
fresh ground black pepper
chopped fresh cilantro leaves ( to garnish )

Instructions

1.In a large pot, bring 4 cups of beef or chicken stock and 1 tsp of salt to a boil.
2.Add the plantains to the pot and boil for about 25 minutes or until they are tender.
3.Remove the plantains from the pot and drain the excess liquid.
4.In a deep frying pan, heat up enough oil to fry the plantains. Wait until the oil is hot and add the plantains.
5.While the plantains are frying, fry 4 slices of thick bacon or salt pork in a separate pan until they are crispy. Remove from the pan and set aside.
6.In the same pan as the bacon or salt pork, sauté chopped garlic until it is softened but not browned.
7.Using a wooden mortar and pestle, smash the fried plantains until they are a chunky and mash-like consistency. Add the garlic and bacon/salt pork fat to the mashed plantains and mix together.
8.Serve the Mofongo hot and garnish with fresh cilantro leaves.
