Ingredients

1/2 onion
1 tablespoon olive oil
3 stalks celery
3 carrots
3 cubanelle peppers ( or sweet bell peppers )
1 habanero
1 head garlic ( I counted about 15 cloves )
1 cucumber , unpeeled
25 plum tomatoes ( ish ... I did n't count in the interest of using them up )
1/4 cup white wine
1 sprig rosemary
3 sprigs lemon thyme
1 pinch dry basil
1 pinch black pepper
1 pinch sea salt
1 can tomato paste
Small Miracles Pasta Sauce is a healthy and delicious alternative to store-bought pasta sauces. This recipe uses a variety of fresh veggies and herbs to create a flavorful sauce that's perfect for pasta night. The habanero pepper adds just the right amount of heat, while the rosemary and thyme give the sauce a delicious herbal flavor. Instructions

1.Preheat the oven to 425°F (218°C).
2.Cut the onion, celery, carrots, peppers, habanero, garlic, and cucumber into large chunks. Toss them with the olive oil in a roasting pan.
3.Roast the vegetables for about 40-45 minutes, or until they are tender and starting to brown.
4.Remove the roasting pan from the oven and let the veggies cool for about 10 minutes.
5.Add the roasted veggies to a large pot along with the plum tomatoes, white wine, rosemary, lemon thyme, basil, black pepper, sea salt, and tomato paste.
6.Simmer the sauce for about 30 minutes, or until it thickens to your desired consistency.
7.Use an immersion blender or a regular blender to blend the sauce until smooth.
8.Serve the pasta sauce over your favorite pasta and enjoy!

PROS

This pasta sauce is loaded with vitamins and nutrients from all of the fresh veggies.
It’s also very flavorful and can be adjusted to your liking by adding more or less of the spices.

The recipe makes a big batch, so you’ll have plenty of leftovers to enjoy throughout the week.

CONS

This recipe takes a bit of time to prepare since you have to roast the veggies before making the sauce.

If you’re not a fan of spicy food, you may want to leave out the habanero pepper.
