1. | Preheat oven to 375°F. |
2. | In a separate bowl, beat eggs and sugar together until thick and pale. |
3. | Fold in sifted flour and cardamom. |
4. | Lightly grease baking cups with cooking spray. |
5. | Pour batter into cups, filling about 3/4 full. |
6. | Bake for 15-18 minutes or until golden brown. |
7. | Allow to cool completely. |
8. | Whip heavy cream until stiff peaks form. |
9. | Cut small hole in the top of each cake and fill with whipped cream. |
10. | Dust with powdered sugar before serving. |
