Ingredients

8 medium swiss brown mushrooms
2 tablespoons extra virgin olive oil
1 small brown onions ( for Australians ) or 1 small yellow onion , finely chopped ( for Americans )
1 -3 garlic clove , minced , depending on how much you like garlic
dried sage , a sprinkling , to taste ( optional )
dried rosemary , a sprinkling , to taste ( optional )
1/4 cup coarse wholemeal breadcrumbs
1/2 cup walnuts , coarsely chopped
1 cup pecorino cheese , grated
sea salt , to taste
fresh ground black pepper , to taste
1 sprig thyme , leaves only
Slow-roasted stuffed Swiss brown mushrooms are the perfect appetizer for any occasion. Earthy and aromatic, Swiss brown mushrooms are the perfect vehicle for savory herbs, spices and cheese. Instructions

1.Preheat oven to 300°F
2.Clean mushroom caps, remove stems and place them in a baking dish
3.In a skillet, heat olive oil over medium heat
4.Add onions and garlic and cook for 2-3 minutes, until the onions are softened
5.Add sage, rosemary and thyme and stir well
6.Add breadcrumbs and walnuts and cook until golden brown
7.Remove from heat and let cool slightly
8.Add pecorino cheese, salt and pepper and stir until combined
9.Spoon stuffing into each mushroom cap
10.Roast for 20-25 minutes, until mushrooms are tender and stuffing is golden brown
