Ingredients

1 large red capsicum
1 large green capsicum
100 g sun-dried tomatoes
150 g marinated mushrooms
100 g marinated feta , crumbled
2 tablespoons pine nuts , toasted
1 tablespoon fresh oregano , coarsely chopped
2 teaspoons fresh rosemary , coarsely chopped
1 tablespoon fresh lemon juice
4 garlic cloves , finely chopped
2 tablespoons olive oil
crusty bread , to serve
mixed salad green , to serve
Slow-roasted stuffed capsicum is a delicious and hearty vegetarian dish that's perfect for any occasion. Instructions

1.Preheat the oven to 120°C.
2.Cut the tops off the capsicums and deseed them.
3.Combine sun-dried tomatoes, marinated mushrooms, feta, pine nuts, oregano, rosemary, lemon juice and garlic in a bowl.
4.Stuff the capsicums with the mixture.
5.Put the capsicums in a greased baking dish and drizzle with olive oil.
6.Roast for 2 hours or until the capsicums are tender and the filling is hot.
7.Serve with crusty bread and mixed salad greens.
