1 large lemon , juice of
100 g caster sugar
4 firm beurre bosc pears
1 vanilla bean , halved
45 g butter , at room temperature
2 tablespoons brown sugar
1/4 cup honey
1/4 cup hazelnuts , halved , roasted
1/3 cup mascarpone

Instructions

1.Preheat the oven to 150° C
2.Combine lemon juice with caster sugar
3.Cut the pears in half lengthwise, core and brush with lemon sugar syrup
4.Place the pears on a baking tray cut side down
5.Add vanilla bean and butter to the baking tray and roast in the oven for 40-45 minutes
6.In a small saucepan, combine brown sugar and honey, stir constantly until melted and golden brown. Let cool slightly
7.Take the hazelnuts, break them in half and roast. Serve with warm pears
8.Top with the caramel sauce, mascarpone and enjoy.
