Ingredients

4 lamb shanks
200 ml yogurt
2 teaspoons turmeric
2 teaspoons ground cumin

400 g basmati rice
1 liter vegetable stock

20 g parsley ( fresh chopped )
20 g mint ( fresh chopped )
200 g broad beans ( cooked )

Instructions

1.Preheat the oven to 150°C/130°C fan/Gas mark 2.
2.Blend the yogurt, turmeric, cumin, coriander and cinnamon in a food processor.
3.Season the lamb and rub with marinade.
4.Place the lamb in a large baking dish, add the stock and roast in the oven for 4 and a half hours.
5.Wash the rice and place in a large saucepan with the remaining stock. Bring to the boil and then cover and simmer for 10-12 minutes or until the rice is cooked through.
6.Stir through the herbs, broad beans, and some seasoning. Cover and leave to rest for 5 minutes.
7.Serve the lamb shanks with the pilaff on the side.
