Ingredients

4 tablespoons pomegranate molasses
1 teaspoon ground cumin
1 lemon , juice of
1 tablespoon olive oil
2 garlic cloves , minced
1 onion , roughly chopped
1 lamb shoulder , weighing about 1 . 6kg , lightly scored
2 pomegranates , seeds only
handful flat leaf parsley
100 g watercress
1 small red onion , finely diced
1 tablespoon olive oil
flat bread , to serve
This Slow-Roast Persian Lamb With Pomegranate Salad is a perfect meal for special occasions or a weekend treat. The succulent lamb is flavoured with a tangy pomegranate molasses marinade, cooked to perfection and served with a refreshing pomegranate salad. Instructions

1.Preheat the oven to 160C/140C fan/gas 3.
2.Mix together the pomegranate molasses, cumin, lemon juice, olive oil, garlic and onion.
3.Place the lamb shoulder in a roasting tin and rub the marinade all over the lamb, getting into all the nooks and crannies.
4.Cover the roasting tin with foil and place in the oven for 4 hours.
5.Remove the foil and cook for a further hour, until the lamb is tender and the skin is crispy.
6.To make the salad: mix together the pomegranate seeds, parsley, watercress, red onion and olive oil. Serve the lamb with the salad and flat bread, if desired.
