Ingredients

1 whole chicken
1 small orange
1 tablespoon olive oil , or as needed

5 potatoes , quartered
1 whole head garlic , cloves peeled but left whole
12 baby carrots
5 small white onions , peeled and quartered

Instructions

1.Preheat the oven to 325°F (165°C).
2.Rinse the chicken inside and out and pat it dry.

5.In a large bowl, mix the potatoes, garlic, baby carrots, and onions with olive oil, chicken bouillon cube, and water.
6.Spread the vegetables evenly on the bottom of a roasting pan and place the chicken on top.
7.Pour the remaining mixture over the chicken and cover the pan with foil.
8.Roast in the preheated oven for 3 hours, basting the chicken every 30 minutes.
9.Remove the foil and roast for an additional 30 minutes.
10.Let the chicken rest for 5-10 minutes before carving.
