Ingredients

2 large zucchini , trimmed and halved lengthwise
4 ripe tomatoes , cored
1/4 cup olive oil

Instructions

1.Scoop out seeds and some flesh from the zucchini halves and tomatoes.
2.In a food processor, combine olive oil, salt, pepper, garlic, basil, Italian herb seasoning, and sugar, and pulse until combined.
3.Stuff the zucchini and tomato halves with the sausage mixture and place them in the slow cooker.
4.Drizzle the prepared olive oil mixture on top of the stuffed vegetables.
5.Cook on high for 3-4 hours or on low for 6-8 hours.
6.Sprinkle Parmesan and mozzarella cheese on top and cook on low for an additional 15 minutes, or until cheese is melted and bubbly.
