6 tablespoons all-purpose flour , divided
1/2 cup all-purpose flour , divided
1 teaspoon salt , divided , plus more to taste
1/2 teaspoon fresh ground pepper , plus more to taste
2 1/2 lbs boneless , skinless chicken thighs , trimmed
4 teaspoons extra-virgin olive oil , divided
3 pieces bacon , chopped
1 2/3 cups guinness beer or 1 2/3 cups other stout beer ( 14-ounce can )
1 lb whole baby carrots or 1 large carrot , cut into 1-inch pieces
1 package cremini or button mushrooms , halved if large
2 cups chopped onions
4 garlic cloves , minced
1 1/2 teaspoons dried thyme
1 cup reduced-sodium chicken broth
2 cups frozen baby peas , thawed

Instructions

1.In a small bowl, combine 4 tablespoons of the all-purpose flour, 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
2.Dredge chicken thighs in the seasoned flour, shaking off the excess.
3.In a large nonstick skillet, heat 2 teaspoons of the olive oil over medium-high heat until shimmering.
4.Add half of the chicken thighs and cook for about 6 minutes, turning once, until browned on both sides.
5.Transfer the chicken thighs to a slow cooker.
6.Repeat with 2 more teaspoons of olive oil and the remaining chicken thighs.
7.Add bacon to the same skillet and cook over medium heat until crisp (5 minutes).
8.Remove bacon and add to the slow cooker.
9.Add onions, garlic, and thyme to the skillet and cook, stirring occasionally, over medium heat for 4 minutes or until slightly softened.
10.Stir in the remaining 2 tablespoons of flour until blended.
11.Add Guinness (or other stout) beer, scraping pan to loosen brown bits.
12.Pour this mixture into the slow cooker.
13.Add carrots and mushrooms to the slow cooker along with chicken broth, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper; stir gently to combine.
14.Cover and cook on low for 6 hours.
15.Add peas and cook, covered, for another 10 minutes or until the peas are tender.
