Ingredients

3 1/2 lbs boneless pork shoulder ( can be reduced to 3 lbs )
1/2 teaspoon salt

2 tablespoons vegetable oil
2 onions , finely chopped
6 garlic cloves , minced
1 tablespoon chili powder
1 cup chicken stock ( recommend 1/2 cup instead )
1 cup frozen corn
1 cup salsa
2 tablespoons tomato paste
1/4 cup fresh cilantro , finely chopped
18 taco shells
2 cups iceberg lettuce , chopped
1 cup tomatoes , diced
1 1/2 cups cheddar cheese , shredded
1 cup light sour cream

Instructions

1.Season the pork shoulder with salt and pepper.
