A French classic, Chicken Chasseur (or "hunter's chicken" in English) is a rustic and hearty dish traditionally prepared on the stovetop with mushrooms, onions, herbs, and wine. This recipe puts a slow-cooker spin on the classic, simplifying the process and allowing the ingredients to meld together for a more complex flavor. Chicken Chasseur is a comfort food staple that goes well with a variety of side dishes, from mashed potatoes to rice pilaf or a simple green salad.

Instructions

1.In a large skillet, cook the bacon over medium heat until crispy. Remove from skillet and set aside.
2.Season the chicken breasts with salt and pepper, then add them to the skillet and cook until golden brown on both sides. Transfer the chicken to the slow cooker.
3.Add a tablespoon of vegetable oil to the skillet, then add the mushrooms, onion, and garlic. Cook until the vegetables are tender, stirring frequently.
4.Add the wine, tomato paste, diced tomatoes, chicken broth, dried porcini mushrooms, thyme, bay leaves, and red pepper flakes to the skillet. Bring to a boil, then reduce heat and simmer for 2-3 minutes. Whisk in the flour until smooth.
5.Pour the mixture over the chicken in the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
6.Sprinkle the bacon and fresh parsley over the chicken, and serve hot with your choice of side dishes.
